Banana Bread Protein Muffins

What you’ll need:IMG_4658

1 large, ripe banana mashed
2 scoops (60 grams total) vanilla protein powder
1 egg
1 egg white
1/2 cup plain non-fat Greek yogurt
1/2 cup coconut sugar
3/4 cup oat flour
1 tsp baking soda



  • Preheat oven to 350•
  • Spray muffin pan or line with silicone or non-stick liners.
  • Mix wet ingredients and sugar (mashed banana, eggs, greek yogurt, sugar) in a medium sized bowlIMG_4660
  • Mix dry ingredients (protein powder, oat flour, and baking soda) in a small bowl.  Mix into wet ingredients.IMG_4661
  • Spoon batter muffin tins and bake for 15-17 minutes, testing with a toothpick.  IMG_4671 IMG_4669

These are also excellent with chocolate chips added!
