A lot of people don’t even give tofu a chance, just because of its bad wrap. But it can be delicious I promise! It just has to be cooked properly, and not plain if you’re new to cooking it.
Its a good vegetarian source of protein and a nice switch up from chicken, turkey and beef. Just make sure you try out the extra firm type when baking, since anything else can be soggy or mushy and not really meant for baking.
BBQ Baked Tofu
- Package of extra firm tofu
- BBQ Sauce of choice
- Coconut oil (or oil of choice)
- Salt & pepper
- lots of paper towel
Start by heating your oven to 400 degrees. Open package of tofu draining water, and slice length-wise to make four large triangles.
Lay these on paper towel then set more paper towel on top and press down, you want to get as much moisture out as possible.
Once this is done, layer two rectangles of tofu and cut into triangles, see picture below-
Layer a baking pan with parchment paper, then spread a bit of coconut oil on the paper, layer the tofu triangles, then spread a bit more coconut oil or spray oil if possible. Add salt and pepper.
Bake for about 15-20 minutes, it should look like its crisping up and browning a bit when you take it out of the oven.
Spread about 2tbsp of BBQ sauce over the triangles (use a pastry brush If you have one, I just use the back of a spoon). Then add any spices (roasted pepper & garlic is good.) Put back in the oven for another 10ish minutes and then it’s done!I served this with asparagus & corn off the cob, and my daughter loved it. This was her first try of tofu as far as I can remember. I gave her a bit of Greek yogurt ranch dressing for dipping of course.
Tofu makes great leftovers for lunch too. See, not so hard!
