Weekend Lunch Prep-Tuna Salad

This is a great lunch/small meal my friend Amanda always made. You can make lots of it and pack it into Tupperware dishes for a few lunches or even for sandwiches, etc.

I used plain Greek yogurt to cut down on using a lot of mayo, and it still tastes good you don’t even notice, plus my daughter loved it!

Loaded Tuna Salad

  • Plain Greek Yogurt (1/4-1/2 cup)
  • Ligtht mayo (1-2 tbsp)
  • Diced tomato (1 tomato)
  • Diced dill pickles
  • Diced avocado (1/2 avocado)
  • Diced light marble cheese
  • salt & peppa
  • 2-3 Cans of Albacore Tuna

Mix it all together in a large bowl and you’re golden! Keep it in the fridge in Tupperware dishes or just cover with Saran Wrap.

** if avocados turning brown doesn’t appeal to you just add them freshly before you eat the tuna salad each time, and keep them out of the mix.
